For those who like fast and nutritional meals, they may want to consider an electric pressure cooker. And nothing smells better than fresh baked bread and loaves are easy to make with a counter top bread maker.

Cooks may want to add a traditional kitchen scale with weights to their collection of cookware accessories. A scale will help with exact measurements and look great on the counter. Vinegar is great in the kitchen and no home should be without it. I think that we all know how good it tastes with chips or in a salad dressing, but vinegar is also a lot more versatile than most people think, and can be used very successfully for cleaning in and around the home. In fact you can even use vinegar for cleaning the microwave. Yes, honestly, vinegar can be an absolute god-send when it comes to cleaning a dirty microwave oven.

No one enjoys sticking their head inside the microwave and using a mixture of 1 part soapy water, 1 part scouring pad and 20 parts elbow grease in an attempt to get rid of all that caked on, burnt on, might as well be glued on, food that can sometimes be the forfeit for trusting hubby or the kids to warm something up for themselves. And you can work up quite a sweat when you are bent over, peering in at the damage and your hand is scrubbing so fast that it is a blur - or maybe that's just the sweat in your eyes. It's hot work and it's hard work. It is also unnecessary work and so you start keeping the Clingfilm next to the microwave in the hopes that they will take the hint. Meanwhile you are left with a bad back, a blouse that has stuck to your back and little hope of catching that film that you have waited all week to see. Unless of course you can get a little help, and here is where vinegar can save the day (Yay!).

Find a small microwave safe bowl and pour 1 cup of warm water into it. Next add a couple of drops of dish soap (washing-up liquid) and 1 tablespoon of vinegar. Give the mixture a stir and then put it in the microwave and cook on high for 3-4 minutes. When the time is up, leave the door firmly closed for a further 15 minutes before you open it. When you do open it the mixture of steam and vinegar fumes should have loosened up the baked on food to an extent that it can be removed with just a sponge. No sweat!

Tip: don't forget to leave that cling film handy for next time. If they don't use it, perhaps you can use it yourself: put on a manic grin, brandish it menacingly over your head and chase them around the kitchen a few times, they will get the hint in the end.

The History of the Microwave

In 1946, Dr. Percy Spencer was quite intrigued when he was testing the magnetron, a new vacuum tube, when all of a sudden the candy bar in his pocket melted. This amazed him so much that he thought he would try another experiment with popcorn kernels. He placed the kernels in front of the magnetron and to his surprise they started popping.

It was the next day that Spencer decided to put an egg next to the magnetron. When he did so, the egg began trembling because of the pressure inside of the egg due to the rapidly rising temperature. When a colleague of Spencer's decided to get a better look at the shaking egg, the egg exploded and he was showered with its contents. This brought Spencer to the conclusion that low-density microwave energy was causing these foods to cook quickly. This is when his experimentation took him to entirely new levels.

That is when Spencer took a metal box and cut out an opening that he could feed the microwave energy through. Once the energy was in the box it was unable to escape, so this created a high-density electromagnetic field. This caused the temperature of any food put inside the box to rise quite rapidly. What this did was revolutionize the way that food is cooked and was the basis for what would become the microwave oven.

However, the microwave oven did not look quite like what we use today. In fact, it weighed approximately 750 pounds and was almost 6 feet in height. This was in late 1946 when the patent was filed by the Raytheon Company. A Boston restaurant was put in charge of testing this large microwave and it was in 1947 that the commercial version of the microwave made its debut on the market, but they cost around $5,000 a piece. Why so expensive? Well, plumbing units also had to be installed because the magnetron had to be cooled by water.

Not everyone looked upon this new invention in a favorable way. It was a complicated unit, but improvements would change the view of the public toward the microwave oven. Smaller units were made and the magnetron was able to be cooled by air, so the need for the plumber was eradicated.

Eventually, microwave ovens were used for more than cooking food. Many commercial establishments were using them to dry cork, paper, and even leather. Then in 1947, the Radarange was introduced by Raytheon. The price was now between $2,000 and $3,000 and the cabinets that housed the microwave were around the size of a refrigerator. Between 1952 and 1955, the first home united, priced at $1295, was introduced by Tappan. It was in 1965 that Raytheon acquired Amana and 1967 when they introduced the first countertop models.

Progression

By 1975, the microwave had made great strides and had even exceeded gas range sales. It became the staple of any kitchen. By 1976, the microwave had more owners than the dishwasher. No longer was the microwave considered a luxury, it was considered a necessity.

Now, we see that microwaves come in many shapes, sizes, colors, and it is difficult to find someone that doesn't have a microwave oven. And as time goes on, the microwave still continues to change face. With the many different settings that ranges from power defrost to popping popcorn at the push of a single button, it is no wonder that most of our meals are cooked within the microwave. It is quick, it is easy, and it also saves a considerable amount of energy.

Regular toaster ovens are modest appliances, typically used for not much more than browning a couple of slices of bread, making melba toast, broiling cheese on a pita for an 'instant pizza', or reheating leftovers if you don't happen to have (or want to use) a microwave.

But in recent years a wide selection of convection toaster ovens has come on the market to redefine what a toaster oven is. These ovens offer a number of major advantages over the lowly appliance I used in my first bachelor apartment:

They use convection. Forced air circulation with a fan - to increase the rate of heat exchange between the oven air and what you're baking. This can reduce baking and roasting times by up to half. That leaves less time for heat to escape through the walls of the toaster oven, which means less energy use overall, saving you money. The convection process also results in more evenly browned meats, and better quality baked goods.

They have better controls. Many come with digital temperature controls and timers. Even those with old mechanical controls are better made than the cheap toaster ovens of the past.

They can hold a lot of food. You can't roast that Thanksgiving turkey in a convection toaster oven, but you can fit just about anything else in it. Many will handle a pizza up to 12 inches wide (and in fact some come with their own pizza tray); and some can accommodate up to 6 regular or 9 small slices of bread at once or toasting.

They are great for roasting. Many models come with a rotisserie, and you can roast a chicken, two cornish hens, or a medium-sized tied roast to perfection. You can also cook a regular roast in a small roasting pan. or broil steaks or lamb chops using only the top element.

They are small and inexpensive. Compared to a regular range oven, a convection toaster oven is tiny. But they are bigger than a regular toaster oven and you'll need to allow open counter space for them. Some models cost under $100; the better ones come in around $170-250 (you can get better deals if you watch for specials). If you're tight on space or tight on cash, these appliances are a great way to combine several appliances in one.

You might wonder why you would want a convection toaster oven if you already have both a toaster and a regular oven. If you just want to toast a slice or two of bread, I would stick with your regular toaster; but if you do more than two slices at a time, or you want a lot more flexibility in terms of toasting, roasting, baking, broiling, and so on, it's handy to have a counter-top unit that does all this. And if you're tired of waiting 15 minutes for your range oven to heat up just so you can broil some garlic bread, a convection toaster oven warms very quickly and uses far less electricity for small jobs.

Many people buy a convection toaster oven because the nominal cost over a regular toaster oven isn't that great - and then they wind up using it instead of their regular oven. You can bake casseroles or lasagna in it, roast meats, and bake cakes, pies, muffins, cup cakes, croissants, and cookies. For less than the cost of a service call on your old oven when the heating element dies, you can get a new oven that does it all.

If you're considering buying a convection toaster product I suggest buying the extended warranty option. For an extra few dollars a year it is worth it. While these products are typically solidly built, in this low price range you expect to see some quality issues in a few of the units, and problems in particular with the timers on these units are not unheard of. Fortunately, this common timer problem doesn't prevent the units from working, just from running on timer.

A convection toaster can be great in situations where you don't have the space for a range, or the budget. For example, a small mountain cabin (assuming it is grid connected) is a perfect place for such an appliance. Or if you're remodelling your kitchen and the contractors have gutted it and told you to stay out for weeks at a time, a convection toaster oven in your basement, along with a kettle or coffee maker, will do for most of your cooking needs.

I love top cook and I like the fact that my kitchen is designed to be open to my living area so that even when we have quests everyone can join into the conversation and no one gets left out because they are the cook. That is usually me. I want to share my ideas on what I think a beautiful kitchen should have and one that will be used a lot. Lets talk about the kitchen island today and things you will want to be sure it has.

1. SIZE Make your kitchen island big enough Size does matter. Make you island big enough to allow you a big enough work area for more that one project at a time.

2. LIGHTING Be sure to add the proper amount of lighting directly above the island The last thing you want is an island without enough lighting to be able to read your cook books or see what wonderful dish that you are preparing.

3. ELECTRICAL OUTLETS Have your electrician add and electrical outlet into your island. What a wonderful buffet you will have if you can load all that food on your island and KEEP it warm. If you do not have any outlets in your island how are you gonna plug up those crock pots and slow cookers.

I am sure you may come up with more ideas of things you will want to add but this is my list of my kitchen island ideas. I enjoy my kitchen more than any room in the house because we love to have company over and especially our kids and grand kids. To me a kitchen island is a wonderful addition if your kitchen is used a lot and maybe if you just plan to sale soon. Believe it or not their is a lot of storage space to be make underneath the island. Use the space below your island to add storage, a wine cooler, your microwave or a number of other things you can come up with but use the space.

3. Avoid not adding plumbing Adding a small sink to your island will be something you will always be grateful for. It is amazing how big of a mess you will not make if you have a sink at your disposal.

Freshen Up Your Kitchen

So you're selling your home and you've read all the books on staging and how to effectively get your home ready for showing. Once of the simplest things that many people overlook is cleaning. Their home may be tidy and staged beautifully, but is it clean? There is nothing like a truly clean home to eliminate any unwanted odors and leave a home smelling fresh and new.

Some of the worst offenders come from our appliances that we used every day. Baked on foods or lingering odors get absorbed into the walls of our refrigerator, countertops and other surfaces, and before you know it we're spending money on fragrance laden air fresheners to try and mask the smells.

Implement this list of cleaning tips to extend the life of your appliances and freshen up your kitchen for your next open house.

Coffee Maker - Start by cleaning your coffee pot either in the sink or dishwasher (depending on manufacturer's instructions). Pour equal parts of water and vinegar into the tank and run it through a couple times. If you have a build up of mineral deposits in your water, run about 2 cups through, unplug and let it sit for an hour. Turn the unit back on and let it run through. You may have to repeat the rinse a couple more times with plain water to get rid of any leftover vinegar or sediment.

Wipe down the outside of the unit with a combination of water and baking soda.

Coffee Grinder - Use a soft brush to wipe out any coffee grains. Place pieces of bread inside and grind. This does a great job of cleaning under the blades - brush again.

Stand-Up Electric Mixer - Wipe it off with dish soap and warm water and wipe after every use.

Toaster - Unplug before cleaning. Although you may be tempted, never use metal tools or knives to recover scraps. Not only could you be electrocuted if the unit was on, but it is very easy to bend the internal metal pieces.

Remove lower tray wipe with a damp cloth and mild dish soap, (use a cleaner free of ammonia for chrome surfaces), and turn upside down, shaking gently.

Toaster oven - Remove racks and clean with warm, soapy water. Never use an abrasive scrubber or steel wool on any surface with a nonstick surface. Clean the outside with a nonabrasive liquid cleaner since most toasters have plastic or painted metal exteriors.

Refrigerator - Wipe down with water and mild dish soap or two tablespoons baking soda for every quart of warm water. Loosen any hardened spills by saturating them with a damp sponge until they break away. Toothbrushes are good for getting into small places. Never use bleach or ammonia.

If you use an open box of baking soda to absorb odors in your fridge, it only traps them; make sure to replace the box regularly. Refrain from using any scented odor-control products as the fragrance becomes absorbed into the plastic. To mask odors, place a small dish of vanilla extract in the fridge.

Your fridge stays cool by removing the heat from the air inside and releasing it through condenser coils. If they get covered with dust, it acts as an insulation and prevents them from doing their job. Keep them clean by vacuuming with a long handled wand or dusting brush. If you have pets, your refrigerator coils may need to be cleaned more often.

Freezer - Sometimes in side-by-side refrigerator-freezers ice may build up and block the defrost drain tube. If you can see this hole, squirt in a mixture of one teaspoon baking soda and two cups hot water (a turkey baster works great for this). If this doesn't work, you may have to set up a service call.

Manual defrost: Never try to pick or pry the ice away for fear of damaging the surface. Simply turn off the freezer and let nature take its course. Store any food in an alternate freezer. Wipe clean with warm, soapy water.

Oven: Don't wait until your oven starts smoking to give it a good cleaning. Wash the racks by hand, unless your manual advises they are dishwasher safe. Try using this home made cleaner before resorting to the more toxic versions:

Plug holes to the broiler with aluminum foil (don't forget to remove after cleaning)

Combine one-quarter cup salt, three-quarters cup baking soda, and one-quarter cup water, and stir into a paste. Brush on, but avoid any bare parts as salt corrodes metal. Leave overnight, remove with a solid spatula and wipe with paper towels. Use a nylon scrubber for any remaining stubborn spots.

Doors should be cleaned with nonabrasive cleaners and control panels wiped with a barely damp cloth (never wet).

Stove: For electric burners, wipe off when they are cold. If stubborn food residue still remains, turn on the fan, turn burners to high and burn off the excess.

Glass Cooktops: Never use harsh cleaners or scrubbies that will scratch the surface. Use only a cloth safe for non-stick surfaces. Wherever possible, wipe spills when they are warm. For burned on residue, use the cleaner recommended by the manufacturer. For heavy stains, carefully scrape off with a single edge razor blade with a plastic handle.

Microwave Ovens: Nothing is worse than opening a door to a microwave and getting hit in the face with odors from the last two weeks worth of cooking. Start by wiping out the interior with warm soapy water and rinsing with plain water. For heavier jobs, combine two tablespoons baking soda in one quart of water, heat on high for three minutes and let stand for another five minutes with the door closed. Wipe clean. If the odors are still there, leave the door open for a few hours. If that doesn't work, stir six tablespoons baking soda or one-half cup lemon juice into a cup of water and heat on high for three minutes. Leave the door open for a few hours.
